Thai Beef Skewer with Peanut Sauce

Ingredients:

Beef Marinade

  • 1 cup full-fat coconut milk
  • 2 tablespoons lime juice (fresh)
  • 1 tablespoon lime zest
  • 1 tablespoon curry powder (yellow or red Thai-style)
  • 1 tablespoon brown sugar or honey
  • 1 tablespoon soy sauce
  • 1½ teaspoons salt
  • 1 tablespoon minced garlic
  • 1 tablespoon grated fresh ginger
  • Optional heat: 1 teaspoon chili flakes or chili paste.

 

Sauce

  • ½ cup creamy peanut butter (unsweetened)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced (or ¼ tsp garlic powder)
  • ½ teaspoon sriracha or chili paste (optional, adjust to taste)
  • ¼–⅓ cup warm water (to thin)

Instructions:

Choose your favorite cut of beef, we choose flank for this, and slice into skewer size pieces.

Combine all ingredients for the marinade in a bowl and place beef inside, making sure to coat thoroughly. Let it marinade for at least an hour but preferably overnight.

While the beef is marinating make your peanut sauce.

Combine all ingredients in a blender and blend until smooth. Add more hot water, if necessary, to reach desired consistency.

Once done, preheat your grill. Then take your skewers and assemble all beef onto them. Grill until your desired temperature.

Place on tray and top with your sauce, garnishing with cilantro or green onions.
