Grilled Halloumi Skewer

Ingredients:

  • 8 oz halloumi cheese, cut into 1-inch cubes
  • 2 tablespoons olive oil (for grilling)
  • 3 tablespoons honey, warmed
  • 1/4 cup pistachios, shelled and finely crushed
  • Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes to prevent burning)
  • Optional: a pinch of sea salt for extra flavor

Instructions:

  1. Prepare the Halloumi: Cut the halloumi cheese into 1-inch cubes, ensuring they are uniform in size for even grilling. Thread 4-5 cubes onto each skewer, leaving a little space between each piece for even cooking.
  2. Heat the Grill: Preheat a grill pan or outdoor grill to medium-high heat. Brush the grill grates with a bit of olive oil to prevent sticking.
  3. Grill the Halloumi: Lightly brush the halloumi skewers with olive oil. Place the skewers on the grill and cook for 2-3 minutes per side, or until the halloumi is golden brown and has distinct grill marks. Be careful not to overcook, as halloumi can become tough if grilled too long.
  4. Assemble the Skewers: Remove the skewers from the grill and place them on a serving platter. While the halloumi is still warm, drizzle each skewer with about 1-2 teaspoons of warmed honey, ensuring it coats the cheese evenly.
  5. Add the Pistachios: Sprinkle the crushed pistachios over the skewers, pressing lightly so they stick to the honey. If desired, add a pinch of sea salt to enhance the flavors.
  6. Serve: Serve the grilled halloumi skewers immediately as an appetizer or snack, while the cheese is still warm and slightly melty.

Note: If you don’t have a grill, you can use a stovetop skillet over medium-high heat to achieve a similar charred effect. Warm the honey slightly in the microwave or on the stovetop to make it easier to drizzle.
