Citrus and Dill Poached Salmon

Ingredients:

  • chicken or seafood broth
  • 3-4 fresh oranges
  • fresh lemon
  • fresh dill
  • salt or Old Bay Seasoning
  • black peppercorns
  • bay leaf
  • fresh salmon fillets
  • optional garnishes – dill and chives
  • white wine

Instructions:

Heat oven to 350 degrees.

Season fish with salt and dill.

Combine orange and lemon juice with chicken stock, white wine, peppercorns, and bay leaf. Pour liquid into a walled baking dish.

Slice some half inch slices of oranges to place in pan under salmon while cooking.

Place salmon in pan and cover with foil. Cook until internal temperature of 140 degrees.

Allow time to rest, then serve and enjoy with your favorite sides such as grilled asparagus.
